Soupe à la Bonne-femme (Leek and Potato Soup)

Ingredients
- the white of 5 medium leeks
- butter
- 1 litre and three quarters lukewarm water or ordinary Consommé
- 500 grammes potatoes
- 15 grammes salt
- 75 grammes butter
- thin rounds of flûte en dentelle
Instructions
- Slice the white of 5 medium leeks and pass them in butter.
- Moisten with 1 litre and three quarters of lukewarm water or of ordinary Consommé.
- Add 500 grammes of potatoes finely sliced in liards.
- Season with 15 grammes of salt if the moistening was done with water.
- Cook gently, then bring to the point with 75 grammes of butter.
- On serving, add thin rounds of flûte en dentelle to the soup.
