Soupe à la Bonne-femme (Leek and Potato Soup)

Ingredients

Instructions

  1. Slice the white of 5 medium leeks and pass them in butter.
  2. Moisten with 1 litre and three quarters of lukewarm water or of ordinary Consommé.
  3. Add 500 grammes of potatoes finely sliced in liards.
  4. Season with 15 grammes of salt if the moistening was done with water.
  5. Cook gently, then bring to the point with 75 grammes of butter.
  6. On serving, add thin rounds of flûte en dentelle to the soup.
