Canapés City (Cheese Butter Canapés with Saucisson and Gruyère)

Ingredients

• round canapés
• 125 grammes fresh butter
• 60 grammes fresh Gruyère
• 60 grammes Parmesan
• half a spoonful thick cream
• a pinch of fine salt
• a point of Cayenne
• saucisson de Lyon
• Gruyère cheese

Instructions

1. Cut the canapés round.
2. Work the softened butter with the grated Gruyère and Parmesan, the thick cream, the pinch of fine salt and a point of Cayenne.
3. Mask the canapés with a thick layer of this composition.
4. Cut two half-circles the size of the canapé, one from a very thin round of saucisson de Lyon and the other from a round of Gruyère cheese.
5. Cover the butter with the two half-circles.
