Sauce à la Diable (Devilled Sauce)

Ingredients
- 1 décilitre and a half vinegar
- 1 large spoonful chopped shallots
- 2 décilitres and a half sauce Espagnole
- 2 spoonfuls tomato purée
- 1 spoonful Harvey sauce
- 1 spoonful Worcestershire sauce
- a strong point of Cayenne
Instructions
- Reduce the vinegar by half with the chopped shallots.
- Add the sauce Espagnole and the tomato purée, and let cook for 5 minutes.
- Complete with the Harvey sauce, the Worcestershire sauce and a strong point of Cayenne.
- Pass through the chinois or the tammy.
