A Cheap and Good Stew Soup

Ingredients

Instructions

  1. Put 4–5 pounds of gristly shin beef into 3 quarts of cold water.
  2. Add salt and vegetables as directed for bouillon (see page 7).
  3. Stew very gently until the whole is very tender.
  4. Lift out the meat and strain the liquor into a large clean saucepan.
  5. Add a thickening of rice-flour or arrow-root, pepper and salt if needed, and a tablespoonful of mushroom catsup.
  6. Cut all the meat into small, thick slices.
  7. Add the sliced meat to the soup.
  8. Serve as soon as it is very hot.
