Consommé aux Quenelles à la moelle (Consommé with Marrow Quenelles)

Instructions

  1. Thicken the ordinary Consommé lightly with tapioca.
  2. Pass 90 grammes of very fresh beef marrow through a fine sieve and let it soften a few moments at the mouth of the oven.
  3. Work it in a bowl until smooth, then add 3 yolks, one after the other.
  4. Finish the mixture with 50 grammes of fresh, very fine breadcrumb, 1 small teaspoonful of flour, half a spoonful of chopped parsley, a pinch of fine salt, a small pinch of pepper and a point of nutmeg.
  5. Mould the mixture into quenelles with a teaspoon.
  6. Poach the quenelles in the Consommé and serve them in it.
