Consommé aux Quenelles à la moelle (Consommé with Marrow Quenelles)

Ingredients
- Ordinary Consommé
- Tapioca
- 90 grammes very fresh beef marrow
- 3 egg yolks
- 50 grammes fresh
- 1 small teaspoonful flour
- Half a spoonful chopped parsley
- A pinch of fine salt
- A small pinch of pepper
- A point of nutmeg
Instructions
- Thicken the ordinary Consommé lightly with tapioca.
- Pass 90 grammes of very fresh beef marrow through a fine sieve and let it soften a few moments at the mouth of the oven.
- Work it in a bowl until smooth, then add 3 yolks, one after the other.
- Finish the mixture with 50 grammes of fresh, very fine breadcrumb, 1 small teaspoonful of flour, half a spoonful of chopped parsley, a pinch of fine salt, a small pinch of pepper and a point of nutmeg.
- Mould the mixture into quenelles with a teaspoon.
- Poach the quenelles in the Consommé and serve them in it.
