- Ordinary Consommé
- Tapioca
- Cauliflower Royale
- Cauliflower florets
- Chervil pluches
Instructions
- Thicken the ordinary Consommé with tapioca.
- Poach a cauliflower Royale in dariole moulds and cut it into rounds.
- Garnish the Consommé with the rounds of Royale, small pieces of cauliflower floret and the chervil pluches.
