Tournedos Ménagère (Served on New Vegetables Steamed in a Closed Cocotte)

Instructions

  1. Take butter beans or « princesse » beans broken into small pieces, new carrots finely sliced, very small new onions and very fresh small peas, all in roughly equal quantity and in proportion to the number of tournedos.
  2. Gather them in an earthenware cocotte and add salt, butter and very little water.
  3. Close the cocotte tightly, so that the vegetables cook mainly by the steam concentrated inside, and cook them.
  4. Sauté the tournedos in butter.
  5. Only at the moment of serving, arrange the tournedos in the cocotte, on the vegetables.
