  1. Drain and trim the poached eggs well.
  2. Add fish jelly to the red sauce Matelote and coat the eggs with it.
  3. Glaze with jelly.
  4. Arrange the eggs in a crown with chopped fish jelly in the middle.
  5. Border the dish with fine croûtons of pink fish jelly.
