Abricots Gratinés (Gratinated Apricots)

Ingredients

Instructions

  1. Spread a stiff layer of marmelade de pommes — or of semolina prepared like the Riz à entremets — on a dish, at an even thickness of 2 centimètres.
  2. Set fine apricot halves poached in syrup over the layer.
  3. Cover the apricots completely with a slightly thin pralin à Condé composition.
  4. Dust the surface with icing sugar.
  5. Put the dish in a slow oven only long enough to colour the pralin lightly.
