Paupiettes d'Anchois (Rolled Anchovy Fillets)

Ingredients
- anchovy fillets
- fish purée
- mayonnaise
- Cayenne
- Beurre d'anchois
Instructions
- Flatten the anchovy fillets lightly.
- Bind any fish purée with mayonnaise and season it up with Cayenne.
- Mask the fillets with this purée and roll them into paupiettes.
- Put a dot of Beurre d'anchois on each paupiette.
