- small lettuces
Instructions
- Sauté the tournedos and arrange them on fried croûtons.
- Set a crown of truffle slices on each tournedos, with a large, very white cock's kidney in the middle.
- Braise small half-lettuces and trim them well.
- Surround the tournedos with them.
