Sauce Pauvre homme (Poor Man's Sauce)

Ingredients
- Butter
- 2 large onions
- 2 and a half décilitres white wine and vinegar
- 3 décilitres ordinary consommé
- 30 grammes brown roux
- 1 small spoonful capers
- 1 half-spoonful parsley
- A point of Cayenne
Instructions
- Fry the 2 large shredded onions in butter and colour them lightly.
- Moisten with 2 and a half décilitres of white wine and vinegar in equal parts, and reduce by two thirds.
- Add 3 décilitres of ordinary consommé.
- Make the liaison with 30 grammes of brown roux.
- Cook gently for 7 to 8 minutes.
- At the moment of serving, finish with 1 small spoonful of capers, 1 half-spoonful of chopped and blanched parsley, and a point of Cayenne.
