Sauce Pauvre homme (Poor Man's Sauce)

Ingredients

Instructions

  1. Fry the 2 large shredded onions in butter and colour them lightly.
  2. Moisten with 2 and a half décilitres of white wine and vinegar in equal parts, and reduce by two thirds.
  3. Add 3 décilitres of ordinary consommé.
  4. Make the liaison with 30 grammes of brown roux.
  5. Cook gently for 7 to 8 minutes.
  6. At the moment of serving, finish with 1 small spoonful of capers, 1 half-spoonful of chopped and blanched parsley, and a point of Cayenne.
