Salade Polonaise (Polish Vegetable and Herring Salad)

Ingredients

• carrots (equal part)
• turnips (equal part)
• beetroot (equal part)
• cucumbers (equal part)
• gherkins (equal part)
• potatoes (equal part)
• hard-boiled eggs (equal part)
• herring fillets (equal part)
• hard-boiled egg quarters
• sauce Mayonnaise collée
• oil
• vinegar
• parsley
• tarragon

Instructions

1. Cut the carrots, turnips, beetroot, cucumbers, gherkins, potatoes, hard-boiled eggs and herring fillets into dice, in equal parts.
2. Dress them in bouquets.
3. Between each bouquet, place a quarter of egg filled with sauce Mayonnaise collée and left to set firm.
4. Season with oil and vinegar, with chopped parsley and tarragon.
