Sole à la Portugaise

Ingredients
- 1 sole
- White wine
- Fish cooking liquor
- 2 medium tomatoes
- Butter
- 1 spoonful onion
- 3 small cooked mushrooms
- A strong pinch of chopped parsley
- White wine sauce
Instructions
- Poach the sole with white wine and fish cooking liquor.
- Press, peel and slice 2 medium tomatoes and melt them in butter with 1 spoonful of chopped, stewed onion.
- Add 3 small cooked mushrooms, sliced, and a strong pinch of chopped parsley.
- Dish the sole and surround it with this garnish.
- Coat the sole with heavily buttered White wine sauce, leaving the garnish bare.
- Glaze briskly, and on taking the sole from the oven scatter a pinch of chopped parsley over the garnish.
