Tournedos Valençay (Tournedos with Noodle and Ham Croquettes and Financière Garnish)

Ingredients

• tournedos
• fresh noodles
• ham
• garniture à la financière

Instructions

1. Sauté the tournedos and arrange them in a ring.
2. Mould small croquettes of fresh noodles with ham in the shape of pucks and fry them at the moment of serving.
3. Set one croquette on each tournedos.
4. Surround with a small garniture à la financière.
