Consommé à l'Italienne (Italian-Style Consommé with Two Royales and Macaroni)

Ingredients
- Ordinary Consommé
- Spinach royale with velouté
- Tomato purée royale
- Fine macaroni
- Grated cheese
Instructions
- Cut the two royales — one of spinach with velouté, the other of tomato purée — into dice.
- Poach the fine macaroni in the Consommé and cut it into lengths of 2 centimetres.
- Garnish the ordinary Consommé with the dice of royale and the macaroni.
- Serve grated cheese separately.
