Consommé Juanita (Clear Chicken Consommé with Rice Royale and Tomato)

Ingredients

• Clear chicken Consommé
• Royale of cream of rice
• Peeled tomato flesh
• Hard-boiled egg yolks

Instructions

1. Cut the royale of cream of rice into rounds.
2. Cut the peeled tomato flesh into dice and poach them in the Consommé.
3. Pass the hard-boiled egg yolks into vermicelli.
4. Garnish the clear chicken Consommé with the rounds of royale, the tomato dice and the egg-yolk vermicelli.
