Poularde Ménagère (Poularde Home-Style, Served in the Terrine)

Instructions

  1. Poach the poularde in a fairly gelatinous fonds blanc.
  2. Slice 6 carrots, 6 new potatoes and 6 new onions, and cook them gently and uncovered in the poularde's stock.
  3. When the vegetables are cooked and the stock is sufficiently reduced, put the poularde in an earthenware terrine and cover it with the vegetables and their cooking liquor.
  4. Serve in the terrine.
