Poularde Ménagère (Poularde Home-Style, Served in the Terrine)

Ingredients
- 1 poularde
- fairly gelatinous fonds blanc
- 6 carrots
- 6 new potatoes
- 6 new onions
Instructions
- Poach the poularde in a fairly gelatinous fonds blanc.
- Slice 6 carrots, 6 new potatoes and 6 new onions, and cook them gently and uncovered in the poularde's stock.
- When the vegetables are cooked and the stock is sufficiently reduced, put the poularde in an earthenware terrine and cover it with the vegetables and their cooking liquor.
- Serve in the terrine.
