Beurre Noir (Black Butter) for Large Services

Ingredients

Instructions

  1. Melt the butter in a pan and cook it until it has taken a brown colour.
  2. Pass it through muslin into a bain-marie.
  3. When it is no more than lukewarm, add the teaspoonful of vinegar reduced with mignonnette.
  4. At the moment of serving, heat it to the right point.
  5. Put a few leaves of parsley fried in butter and the spoonful of capers on the item that is to be moistened with the beurre noir.
