Beurre Noir (Black Butter) for Large Services

Ingredients
- 125 grammes butter (proportions for one service)
- 1 teaspoonful vinegar reduced with mignonnette
- a few leaves parsley
- 1 spoonful capers
Instructions
- Melt the butter in a pan and cook it until it has taken a brown colour.
- Pass it through muslin into a bain-marie.
- When it is no more than lukewarm, add the teaspoonful of vinegar reduced with mignonnette.
- At the moment of serving, heat it to the right point.
- Put a few leaves of parsley fried in butter and the spoonful of capers on the item that is to be moistened with the beurre noir.
