Huîtres à la Polonaise (Oysters à la Polonaise)

Ingredients
- Oysters
- Salt
- Butter
- Very fine breadcrumbs
Instructions
- Open the oysters and beard them.
- Arrange them two by two in deep shells set on a tray spread with a layer of salt, so that they stand level.
- Heat in a pan a quantity of butter proportionate to the number of oysters, at 4 grammes per oyster.
- Throw in 30 grammes of very fine breadcrumbs per 100 grammes of butter and fry the crumbs.
- Put a spoonful of this « polonaise » on each 2 oysters.
- Pass into a hot oven for 2 minutes.
