Huîtres à la Polonaise (Oysters à la Polonaise)

Instructions

  1. Open the oysters and beard them.
  2. Arrange them two by two in deep shells set on a tray spread with a layer of salt, so that they stand level.
  3. Heat in a pan a quantity of butter proportionate to the number of oysters, at 4 grammes per oyster.
  4. Throw in 30 grammes of very fine breadcrumbs per 100 grammes of butter and fry the crumbs.
  5. Put a spoonful of this « polonaise » on each 2 oysters.
  6. Pass into a hot oven for 2 minutes.
