Consommé à la Brunoise (Clear Soup with Diced Vegetables)

Ingredients
- 2 litres consommé
- 300 grammes red of carrot
- 200 grammes turnip
- 3 medium whites of leek
- 2 small stalks of celery
- 1 half small onion
- 1 pinch fine salt
- 1 pinch powdered sugar
- butter
- 1 half-litre consommé
- 1 spoonful fine green peas
- green beans
- chervil pluches
Instructions
- For 2 litres of consommé, that is one service, take 300 grammes of red of carrot, 200 grammes of turnip, 3 medium whites of leek, 2 small stalks of celery and half a small onion.
- Cut these vegetables into dice of 3 millimetres on a side.
- Season them with a pinch of fine salt and a pinch of powdered sugar.
- Sweat them gently in butter, then finish the cooking with about half a litre of consommé.
- At the moment of serving, add the necessary consommé and complete with a spoonful of fine, well-green peas, as much green beans cut into small squares, and chervil pluches.
