Consommé à la Brunoise (Clear Soup with Diced Vegetables)

Ingredients

Instructions

  1. For 2 litres of consommé, that is one service, take 300 grammes of red of carrot, 200 grammes of turnip, 3 medium whites of leek, 2 small stalks of celery and half a small onion.
  2. Cut these vegetables into dice of 3 millimetres on a side.
  3. Season them with a pinch of fine salt and a pinch of powdered sugar.
  4. Sweat them gently in butter, then finish the cooking with about half a litre of consommé.
  5. At the moment of serving, add the necessary consommé and complete with a spoonful of fine, well-green peas, as much green beans cut into small squares, and chervil pluches.
