Entrecôte à l'Hôtelière (Entrecôte with Maître-d'Hôtel Butter and Duxelles)

Instructions

  1. Sauté the entrecôtes in butter.
  2. Work a tablespoon of dry Duxelles, strongly seasoned with onion and shallot, into 150 grammes of Beurre à la maître-d'hôtel.
  3. Cover the entrecôtes with this butter.
  4. Deglaze the sauté pan with 1 and a half decilitres of white wine and reduce by two thirds.
  5. Add a spoonful of melted meat glaze and pour over the entrecôtes.
