Cerises Jubilee (Cherries Jubilee)

Ingredients
- fine cherries
- syrup
- arrowroot
- cold water
- kirsch
Instructions
- Stone fine cherries and poach them in syrup.
- Arrange them in small silver timbales.
- Reduce the poaching syrup.
- Slake arrowroot with a little cold water, allowing one spoonful of arrowroot to 3 décilitres of syrup, and thicken the syrup with it.
- Cover the cherries with the thickened syrup.
- Pour a teaspoonful of heated kirsch into each timbale and set it alight just as it goes to table.
