Cerises Jubilee (Cherries Jubilee)

Ingredients

Instructions

  1. Stone fine cherries and poach them in syrup.
  2. Arrange them in small silver timbales.
  3. Reduce the poaching syrup.
  4. Slake arrowroot with a little cold water, allowing one spoonful of arrowroot to 3 décilitres of syrup, and thicken the syrup with it.
  5. Cover the cherries with the thickened syrup.
  6. Pour a teaspoonful of heated kirsch into each timbale and set it alight just as it goes to table.
