Pudding à l'Américaine (American Pudding)

Ingredients
- 75 grammes crumb of bread
- 100 grammes brown sugar
- 100 grammes flour
- 75 grammes marrow
- 75 grammes beef suet
- 100 grammes candied fruit
- 1 egg
- 3 yolks
- a pinch of chopped orange and lemon zest
- a little nutmeg
- a little cinnamon
- a small glass of cognac or rum
- butter and flour
- Sabayon with rum
Instructions
- Put into a terrine 75 grammes of crumb of bread, 100 grammes of brown sugar, 100 grammes of flour, 75 grammes of chopped marrow and as much chopped beef suet, 100 grammes of diced candied fruit, one egg and 3 yolks, a pinch of chopped orange and lemon zest, a little nutmeg and cinnamon, and a small glass of cognac or rum.
- Mix the whole together.
- Pour the mixture into a mould or terrine, buttered and floured.
- Cook in a bain-marie.
- Serve a Sabayon with rum at the same time.
