Ingredients
- Chicken Consommé
- 6 spoonfuls very red tomato purée
- Hop shoots
Instructions
- Dry the very red tomato purée and pass it through a cloth.
- During the clarification of the chicken Consommé, add 6 spoonfuls of this purée for each litre of Consommé.
- Blanch the hop shoots and cut them into regular sections.
- Garnish the Consommé with the hop shoots.
