Squabs à la Minute

  1. Cut the squabs in four, flatten the pieces lightly, season them and cook them in butter.
  2. A few minutes before the cooking is complete, add a little very finely chopped onion and chopped parsley.
  3. As soon as the onion is cooked, range the pieces in a crown on a dish.
  4. Deglaze the pan with a dash of cognac and lemon juice, add a few spoonfuls of meat glaze and finish lightly with butter.
  5. Coat the pieces of squab with this sauce.
  6. Set a garnish of sliced raw mushrooms sautéed in butter in the middle.
