Squabs à la Minute

Ingredients
- Squabs (pigeonneaux)
- Butter
- Onion
- Parsley
- Cognac
- Lemon juice
- Meat glaze (glace de viande)
- Raw mushrooms
Instructions
- Cut the squabs in four, flatten the pieces lightly, season them and cook them in butter.
- A few minutes before the cooking is complete, add a little very finely chopped onion and chopped parsley.
- As soon as the onion is cooked, range the pieces in a crown on a dish.
- Deglaze the pan with a dash of cognac and lemon juice, add a few spoonfuls of meat glaze and finish lightly with butter.
- Coat the pieces of squab with this sauce.
- Set a garnish of sliced raw mushrooms sautéed in butter in the middle.
