Lapwing Eggs Petite-Reine (Cold)

Ingredients

Instructions

  1. Line dariole moulds with white jelly.
  2. Line them in a very fine chequerboard pattern with poached egg white and truffle.
  3. Set the hard-boiled eggs inside, point downwards.
  4. Finish filling the moulds with jelly and let it set.
  5. Unmould at the moment of serving and arrange in a crown.
  6. Garnish the centre with a salad of asparagus tips.
  7. Border the dish with notched crescents of white jelly.
