Instructions

  1. With a plain round cutter 2 centimetres in diameter, lift a piece of rind from each mandarin on the stalk side.
  2. Empty the mandarins.
  3. Soak crumbled biscuits à la cuiller in maraschino and add them to a violet Bavarois composition.
  4. Fill the rinds with this composition.
  5. At the moment of serving, cover each with the round of rind removed and arrange on a napkin.
