- Clear chicken Consommé
- Carrots
- Cream royale
- Green peas
- Asparagus tips
- Rice
- Chervil pluches
Instructions
- Scoop the carrots out with a fluted spoon, cook them in the Consommé and glaze them.
- Cut the cream royale into pastilles.
- Cook the rice keeping the grains quite whole.
- Garnish the clear chicken Consommé with the carrots, the royale, the green peas, the asparagus tips, the rice and the chervil pluches.
