Loin of Pork à la Paysanne

Instructions

  1. Roast the loin of pork in an earthenware dish.
  2. Slice the 4 onions and sauté them in butter.
  3. When the loin is half cooked, surround it with the kilo of quartered potatoes and the onions.
  4. Finish the cooking, basting the garnish often with the fat from the loin.
  5. On taking the dish from the oven, scatter a pinch of coarsely chopped parsley over the garnish and serve just as it is.
