Instructions
- Prepare a clear chicken Consommé.
- Cut serrated crescents from the red of carrots and from turnips and cook them down separately in the Consommé.
- Add chopped truffle and langue écarlate to chicken farce, form a boudin, poach it, and cut it into thin rounds trimmed with a fluted cutter.
- Cut a royale à la crème and a royale of pea purée with a small round fluted cutter.
- Garnish the Consommé with the crescents, the boudin rounds, the royales, asparagus tips and pluches of chervil.
