Consommé à la Montmort (Chicken Consommé with Vegetable Crescents, Forcemeat Boudin and Royales)

Instructions

  1. Prepare a clear chicken Consommé.
  2. Cut serrated crescents from the red of carrots and from turnips and cook them down separately in the Consommé.
  3. Add chopped truffle and langue écarlate to chicken farce, form a boudin, poach it, and cut it into thin rounds trimmed with a fluted cutter.
  4. Cut a royale à la crème and a royale of pea purée with a small round fluted cutter.
  5. Garnish the Consommé with the crescents, the boudin rounds, the royales, asparagus tips and pluches of chervil.
