Saddle of Roe Deer à l'Allemande

Ingredients
- saddle of roe deer
- raw marinade
- cream
- juniper berry
- melted meat glaze
Instructions
- Marinate the saddle for 2 or 3 days in a raw marinade.
- Garnish the bottom of a narrow roasting tray with the vegetables of the marinade and roast the saddle in it.
- Withdraw the saddle as soon as it is cooked.
- Deglaze the tray with a little marinade and reduce almost entirely.
- Remove the fat, then add 3 decilitres of cream and a pulverized juniper berry.
- Reduce again by a third.
- Finish with a thread of melted meat glaze and pass the sauce through the étamine.
- Serve the sauce at the same time as the saddle.
