Saddle of Roe Deer à l'Allemande

Ingredients

Instructions

  1. Marinate the saddle for 2 or 3 days in a raw marinade.
  2. Garnish the bottom of a narrow roasting tray with the vegetables of the marinade and roast the saddle in it.
  3. Withdraw the saddle as soon as it is cooked.
  4. Deglaze the tray with a little marinade and reduce almost entirely.
  5. Remove the fat, then add 3 decilitres of cream and a pulverized juniper berry.
  6. Reduce again by a third.
  7. Finish with a thread of melted meat glaze and pass the sauce through the étamine.
  8. Serve the sauce at the same time as the saddle.
