Brochettes (Assorted Skewers of Liver or Sweetbreads)

Ingredients
- principal element: calf's
- cooked mushrooms
- lean bacon
- or lean ham
- butter
- Duxelles
- breadcrumbs
- Beurre maître-d'hôtel
Instructions
- Choose the principal element — calf's, pig's or lamb's liver, chicken livers, or calf's or lamb's sweetbreads — and the auxiliary elements: mushrooms cut in escalopes, small squares of blanched lean bacon or of lean ham.
- When the principal element is liver, cut it in escalopes and sauté it in butter.
- Roll the principal element and its accompaniments in a stiff Duxelles.
- Thread them alternately on ring skewers and breadcrumb them.
- Put the brochettes on the grill and finish the cooking over a low fire, for the elements that were only seized or blanched.
- Serve on a half-melted Beurre maître-d'hôtel, or on a light sauce harmonising with the principal element.
