Potage Waldèze (Tapioca Consommé with Tomato)

Ingredients

• 1 litre and three quarters Consommé with tapioca
• 3 good red tomatoes
• 1 décilitre boiling Consommé
• 100 grammes Gruyère
• 25 grammes Parmesan

Instructions

1. Prepare 1 litre and three quarters of Consommé with tapioca as usual.
2. Peel, press and cut in small dice 3 good red tomatoes, poach them in Consommé, and add them to the soup.
3. Or else dilute 1 décilitre and a half of very red concentrated purée with 1 décilitre of boiling Consommé and add that instead.
4. Serve separately 100 grammes of grated Gruyère mixed with 25 grammes of grated Parmesan.
