Consommé à la Rossini (Chicken Consommé with Foie Gras and Truffle Profiteroles)

Ingredients

• Chicken Consommé
• Tapioca
• Profiteroles the size of a hazelnut
• Foie gras purée
• Truffle purée

Instructions

1. Thicken the chicken Consommé lightly with tapioca.
2. Make profiteroles the size of a hazelnut and keep them very crisp.
3. Mix equal parts of foie gras purée and truffle purée and fill the profiteroles with it.
4. Serve the profiteroles very hot, separately from the Consommé.
