Sole à la Nantua

Ingredients

Instructions

  1. Poach the sole with fish fumet and a little mushroom cooking liquor.
  2. Drain the sole and arrange it on the serving dish.
  3. Surround it with 12 shelled crayfish tails.
  4. Coat with Sauce Nantua.
  5. Set a row of good black truffle slices along the middle of the sauced sole.
