Instructions
- Beat the eggs with a little very fresh thick cream and scramble them as usual.
- Finish them with 3 crayfish tails for every 2 eggs.
- Dress in small porcelain cases with a fine slice of truffle in each.
- Arrange the cases on a napkin.
