Œufs Orloff (Scrambled Eggs with Cream, Crayfish Tails and Truffle)

Instructions

  1. Beat the eggs with a little very fresh thick cream and scramble them as usual.
  2. Finish them with 3 crayfish tails for every 2 eggs.
  3. Dress in small porcelain cases with a fine slice of truffle in each.
  4. Arrange the cases on a napkin.
