Œufs à la Moscovite (Cold Hard-Boiled Eggs Filled with Caviar)

Ingredients

Instructions

  1. Trim hard-boiled eggs slightly at both ends.
  2. Band each egg at bottom and top with 3 strips of anchovy fillet and set a dot of truffle halfway up, to imitate the bung of a barrel.
  3. Hollow the eggs out with a column tube and fill them with caviar, mounding it to a point above the rim.
  4. Set each egg in a good white artichoke bottom and surround it with a ribbon of chopped jelly.
