Kaltckale

Ingredients
- grammes peaches, very melting, peeled and sliced
- grammes pineapple, peeled and sliced
- grammes melon flesh, well ripened, in dice
- grammes raspberries and red and white currants, stripped
- fragment cinnamon
- /2 bottle white wine
- grammes sugar
- lemon zest
- /2 litre strawberry and currant purée, mixed
- bottle champagne
Instructions
- Peel and slice the peaches and the pineapple; add the diced melon and the stripped raspberries and currants.
- Gather the fruit in a timbale and keep it on ice.
- Infuse a fragment of cinnamon in half a bottle of boiling white wine; add 650 grammes of sugar and a lemon zest, and let it cool, stirring from time to time.
- Mix half a litre of mixed strawberry and currant purée into the infusion.
- Filter it, and complete it with a bottle of champagne.
- Pour over the fruit and serve very cold.
