Ingredients

Instructions

  1. Peel and slice the peaches and the pineapple; add the diced melon and the stripped raspberries and currants.
  2. Gather the fruit in a timbale and keep it on ice.
  3. Infuse a fragment of cinnamon in half a bottle of boiling white wine; add 650 grammes of sugar and a lemon zest, and let it cool, stirring from time to time.
  4. Mix half a litre of mixed strawberry and currant purée into the infusion.
  5. Filter it, and complete it with a bottle of champagne.
  6. Pour over the fruit and serve very cold.
