Terrine de Poularde en conserve (Preserved Fattened Pullet in Tin)

Instructions

  1. Prepare the poularde as for the Poularde en terrine à la Gelée above.
  2. Put it in a tin that will just hold it.
  3. Solder the tin and mark the top with a point of tin.
  4. Put it in a pot with enough water to cover it and boil for an hour.
  5. Take it out and let it cool upside down, so that the fat settles at the bottom of the tin and the breast is enveloped in jelly.
