Consommé à l’Infante (Chicken Consommé with Tapioca)

Ingredients
- Chicken consommé
- Tapioca
- Sweet peppers (optional)
- Chervil pluches (optional)
- Profiteroles the size of a small hazelnut
- Foie gras purée
- Velouté
Instructions
- Thicken a chicken consommé very lightly with tapioca.
- Garnish it, if wished, with a fine julienne of sweet peppers and chervil pluches.
- For the ordinary garnish, lighten a foie gras purée with Velouté and fill with it profiteroles the size of a small hazelnut.
- Serve the profiteroles separately.
