Gnoki de Pommes de terre (Potato Gnocchi)

Ingredients
- 1 kilo potatoes
- 50 grammes butter
- 2 small eggs
- 2 egg yolks
- 150 grammes flour
- salt
- pepper
- nutmeg
- grated cheese
- melted butter
Instructions
- Cook the potatoes à l'anglaise and drain them as soon as they are done.
- Pass them briskly through the sieve.
- While the purée is burning hot, work in the butter, the small eggs, the yolks, the flour, salt, pepper and nutmeg.
- Divide into walnut-sized pieces, roll them into balls and flatten them lightly with a fork to mark a lattice on top.
- Poach them in boiling water, then drain on a cloth.
- Arrange them in layers, scattering grated cheese between each layer.
- Sprinkle the surface with grated cheese, sprinkle copiously with melted butter and gratinate in a hot oven.
