  1. Cook the potatoes à l'anglaise and drain them as soon as they are done.
  2. Pass them briskly through the sieve.
  3. While the purée is burning hot, work in the butter, the small eggs, the yolks, the flour, salt, pepper and nutmeg.
  4. Divide into walnut-sized pieces, roll them into balls and flatten them lightly with a fork to mark a lattice on top.
  5. Poach them in boiling water, then drain on a cloth.
  6. Arrange them in layers, scattering grated cheese between each layer.
  7. Sprinkle the surface with grated cheese, sprinkle copiously with melted butter and gratinate in a hot oven.
