Pâte à Choux ordinaire (Ordinary Choux Paste)

Ingredients
- 7 1/2 décilitres water
- 375 grammes butter
- 15 grammes salt
- 25 grammes sugar
- 500 grammes sifted flour
- 16 medium eggs
- 1 spoonful orange-flower water
Instructions
- Put the water, salt, sugar and butter in a saucepan and bring to the boil.
- Draw off the fire and add the flour.
- Mix the flour in and dry the paste out over a brisk fire until it no longer sticks to the spoon and sweats slightly.
- Completely off the fire, add the eggs two by two, incorporating each pair well into the paste before adding more.
- When all the eggs have been absorbed, complete the paste with the orange-flower water.
