Pâte à Choux ordinaire (Ordinary Choux Paste)

Ingredients

Instructions

  1. Put the water, salt, sugar and butter in a saucepan and bring to the boil.
  2. Draw off the fire and add the flour.
  3. Mix the flour in and dry the paste out over a brisk fire until it no longer sticks to the spoon and sweats slightly.
  4. Completely off the fire, add the eggs two by two, incorporating each pair well into the paste before adding more.
  5. When all the eggs have been absorbed, complete the paste with the orange-flower water.
