Soupe de Mariage (Wedding Soup)

Ingredients

Instructions

  1. Set a marmite with 1 kilo of rump of beef, 1 kilo of leg of mutton, 1 large fowl and 4 litres and a half of water.
  2. Season, garnish and cook as for an ordinary marmite.
  3. Strain the broth.
  4. Add 65 grammes of rice and a small pinch of powdered saffron per litre of broth.
  5. Cook gently for 35 to 40 minutes, until the soup is very thick and the rice well cooked.
