Soupe de Mariage (Wedding Soup)

Ingredients
- 1 kilo rump of beef
- 1 kilo leg of mutton
- 1 large fowl
- 4 litres and a half water
- seasoning and garnish as for an ordinary marmite
- 65 grammes rice
- a small pinch of powdered saffron
Instructions
- Set a marmite with 1 kilo of rump of beef, 1 kilo of leg of mutton, 1 large fowl and 4 litres and a half of water.
- Season, garnish and cook as for an ordinary marmite.
- Strain the broth.
- Add 65 grammes of rice and a small pinch of powdered saffron per litre of broth.
- Cook gently for 35 to 40 minutes, until the soup is very thick and the rice well cooked.
