  1. On the dish: line the dish with 4 thin escalopes of lobster tail prepared à l'Américaine.
  2. Break the eggs over them and cook.
  3. Surround with a ribbon of sauce Américaine.
  4. Fried: cook 2 eggs in the pan — Escoffier's 'fried egg' here means the egg cooked in the pan.
  5. Slide them onto a hot plate.
  6. Set 2 slices of grilled Bacon on one side of them and a grilled tomato on the other.
