Bread and Cheese Pudding (Pudding de Fromage au Pain)

Ingredients

Instructions

  1. Butter thin slices of stale bread and sprinkle them with grated cheese.
  2. Arrange them in a pie dish until it is three-quarters filled.
  3. Slake 4 egg yolks with a decilitre and a half of Consommé blanc — proportions suited to a dish holding half a litre — and pour this mixture over the bread.
  4. Sprinkle copiously with grated cheese.
  5. Bake in the oven and glaze at the last moment.
