Potage Batwinia (Cold Russian Soup)

Ingredients
- 350 grammes spinach leaves
- 250 grammes sorrel leaves
- 250 grammes beetroot leaves
- 100 grammes butter
- 1 litre and a quarter sharp white wine
- 12 grammes salt
- 10 grammes sugar
- 150 grammes agoursis
- a pinch of chopped chervil
- a pinch of chopped tarragon
- 10 grammes shallots
- small pieces of ice
Instructions
- Shred the spinach, sorrel and beetroot leaves.
- Gather them in a saucepan with 100 grammes of butter and melt gently.
- Pass through a fine sieve.
- Dilute the purée with 1 litre and a quarter of sharp white wine.
- Add the salt, sugar, diced agoursis or cucumbers, chopped chervil and tarragon, and the finely chopped shallots.
- Serve with small pieces of ice in the soup.
