Grilled Young Rabbit à la Bergère

Ingredients
- 1 well-fleshed young rabbit
- Egg and breadcrumbs
- Melted butter
- Rectangles of lean bacon
- Pommes pailles
- Sauce Duxelles aux mousserons
Instructions
- Remove the forepart of a well-fleshed young rabbit, keeping only the saddle and the legs.
- Break the joint bones of the legs and cross the legs.
- Roast it half through.
- Bread the rabbit à l'anglaise and sprinkle it with melted butter.
- Complete the cooking gently on the grill.
- Dress it and surround it with rectangles of lean bacon, blanched and grilled.
- Dispose a bouquet of pommes pailles at each end.
- Serve separately a sauce Duxelles aux mousserons.
