Grilled Young Rabbit à la Bergère

Instructions

  1. Remove the forepart of a well-fleshed young rabbit, keeping only the saddle and the legs.
  2. Break the joint bones of the legs and cross the legs.
  3. Roast it half through.
  4. Bread the rabbit à l'anglaise and sprinkle it with melted butter.
  5. Complete the cooking gently on the grill.
  6. Dress it and surround it with rectangles of lean bacon, blanched and grilled.
  7. Dispose a bouquet of pommes pailles at each end.
  8. Serve separately a sauce Duxelles aux mousserons.
