Instructions

  1. Shape the bouchée cases round and fluted.
  2. Cut a salpicon of breast of chicken, mushrooms and truffles.
  3. Bind it with a sauce Allemande.
  4. Fill the bouchées with the salpicon.
  5. The original garnish is a purée of chicken with cream, which may be used instead.
