Sauce Hachée (Chopped Sauce)

Ingredients
- 100 grammes onion
- 1 1/2 spoonfuls shallots
- butter
- 3 décilitres vinegar
- 4 décilitres sauce Espagnole
- 1 1/2 décilitres sauce Tomate
- 1 1/2 spoonfuls lean ham
- 1 1/2 spoonfuls small capers
- 1 1/2 spoonfuls dry Duxelles
- 1/2 spoonful chopped parsley
Instructions
- Cook 100 grammes of finely chopped onion and 1 1/2 spoonfuls of finely chopped shallots in butter without letting them colour.
- Moisten with 3 décilitres of vinegar and reduce by half.
- Add 4 décilitres of sauce Espagnole and 1 1/2 décilitres of sauce Tomate, and let it boil for 5 to 6 minutes.
- Complete with 1 1/2 spoonfuls of chopped lean ham, 1 1/2 spoonfuls of small capers, 1 1/2 spoonfuls of dry Duxelles and 1/2 spoonful of chopped parsley.
