Sauce Hachée (Chopped Sauce)

Ingredients

Instructions

  1. Cook 100 grammes of finely chopped onion and 1 1/2 spoonfuls of finely chopped shallots in butter without letting them colour.
  2. Moisten with 3 décilitres of vinegar and reduce by half.
  3. Add 4 décilitres of sauce Espagnole and 1 1/2 décilitres of sauce Tomate, and let it boil for 5 to 6 minutes.
  4. Complete with 1 1/2 spoonfuls of chopped lean ham, 1 1/2 spoonfuls of small capers, 1 1/2 spoonfuls of dry Duxelles and 1/2 spoonful of chopped parsley.
